Reader Recipe: SANE Vietnamese Pork Meatballs with Peanut Sauce

 
Meatballs:

  • 1 lb lean ground pork, turkey or chicken or a combination
  • 1 stalk lemon grass (I bought it in a tube in the produce section)
  • ¼ cup fresh cilantro
  • 1-2 small chilies or a squirt of chili paste or sambal oelek
  • 4 garlic cloves, crushed
  • 1 tsp Splenda brown sugar
  • 1 Tbsp fish sauce (optional)
  • 1 tsp sesame oil
  • 1 tsp thai curry paste (I used the red)
  • 1 tsp soy sauce

 
Remove tough outer leaves of lemon grass and chop the tender inner leaves finely.  Finely chop the cilantro and chilies as well, removing the stems from the silantro and seeds from the chilies.  Combine all ingredients in a bowl, mix with your hands.  Form in balls and place an inch apart on a baking sheet.  Bake at 350 for 15-20 mins.  Makes about 2 dozen meat balls.
 
Peanut Sauce:

  • 2-4 TBSP chicken or vegetable broth
  • ¼ cup all natural peanut butter
  • 3 TBSP soy sauce
  • 1 TBSP Splenda brown sugar
  • 2 TBSP vice vinegar or lime juice
  • 1 clove garlic, crushed
  • 1-2 tsp grated fresh ginger
  • 1 tsp sesame oil (optional)
  • ¼ – ½ tsp curry paste (optional)
  • 1 tsp coconut extract (optional)

 
Combine all ingredients in a blender or jar and blend or shake until smooth.  Refrigerate until you’re ready to serve.  Use more or less broth to make the sauce as thick or thin as you like.  It gets a little thicker once it sits for a while.  I added the coconut extract in my recipe.
